Ingredients

  • Sweet Potatoes: 4 large sweet potatoes, peeled and cubed
  • Butter: 1/2 cup (1 stick), melted
  • Brown Sugar: 1 cup, packed
  • Milk: 1/2 cup, whole or evaporated
  • Eggs: 2 large, beaten
  • Vanilla Extract: 1 teaspoon
  • Salt: 1/2 teaspoon
  • Pecan Topping: 1 cup pecans, chopped; 1/2 cup brown sugar; 1/4 cup flour; 1/4 cup butter, melted

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Boil the sweet potatoes in a large pot of salted water for about 15-20 minutes, or until tender. Drain and let cool slightly.
  3. In a large mixing bowl, mash the sweet potatoes until smooth.
