Ingredients
- Sweet Potatoes: 4 large sweet potatoes, peeled and cubed
- Butter: 1/2 cup (1 stick), melted
- Brown Sugar: 1 cup, packed
- Milk: 1/2 cup, whole or evaporated
- Eggs: 2 large, beaten
- Vanilla Extract: 1 teaspoon
- Salt: 1/2 teaspoon
- Pecan Topping: 1 cup pecans, chopped; 1/2 cup brown sugar; 1/4 cup flour; 1/4 cup butter, melted
Instructions
- Preheat your oven to 350°F (175°C).
- Boil the sweet potatoes in a large pot of salted water for about 15-20 minutes, or until tender. Drain and let cool slightly.
- In a large mixing bowl, mash the sweet potatoes until smooth.
- Add melted butter, brown sugar, milk, beaten eggs, vanilla extract, and salt to the mashed sweet potatoes. Mix until well combined.
- Transfer the sweet potato mixture to a greased 9×13 inch baking dish.
- In a separate bowl, combine the pecans, brown sugar, flour, and melted butter for the topping. Mix until crumbly.

- This casserole can be made a day in advance. Prepare the sweet potato mixture and topping separately, then assemble and bake before serving.
