Description

A comforting Sweet Potato Casserole featuring creamy sweet potatoes topped with a crunchy pecan streusel.


Ingredients

  • 4 cups sweet potatoes (mashed)
  • 1/2 cup brown sugar
  • 1/2 cup milk
  • 1/4 cup butter (melted)
  • 2 eggs
  • 1 tsp vanilla extract
  • 1 tsp cinnamon
  • 1/2 tsp salt
  • 1 cup chopped pecans
  • 1/2 cup brown sugar (for topping)
  • 1/4 cup flour (for topping)
  • 1/4 cup butter (melted, for topping)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Combine the mashed sweet potatoes, 1/2 cup of brown sugar, milk, melted butter, eggs, vanilla extract, cinnamon, and salt in a large mixing bowl until creamy.
  3. Transfer the mixture to a greased 9×13 inch baking dish.
  4. Mix the chopped pecans, 1/2 cup brown sugar, flour, and melted butter in another bowl until crumbly.
  5. Sprinkle the topping evenly over the sweet potato mixture.
  6. Bake for 30-35 minutes until the topping is golden brown.
  7. Cool slightly before serving.

Notes

This casserole can be prepared in advance and reheated. For a vegan option, substitute eggs with flaxseed meal and butter with coconut oil.
