Ingredients

  • 2 slices of whole grain bread
  • 1/2 cup mashed sweet potatoes
  • 1/2 cup chopped kale
  • 1/2 cup shredded cheese (cheddar or your choice)
  • 1 tablespoon olive oil
  • Salt and pepper to taste

Instructions

  1. Preheat a skillet over medium heat.
  2. In a bowl, mix the mashed sweet potatoes and chopped kale. Season with salt and pepper.
  3. Spread the sweet potato and kale mixture on one slice of bread.
  4. Top with shredded cheese and place the other slice of bread on top.
