Ingredients

- 1/2 cup mashed sweet potatoes
- 1/2 cup chopped kale
- 1/2 cup shredded cheese (cheddar or your choice)
- 1 tablespoon olive oil

Instructions
- Preheat a skillet over medium heat.
- In a bowl, mix the mashed sweet potatoes and chopped kale. Season with salt and pepper.
- Spread the sweet potato and kale mixture on one slice of bread.
- Top with shredded cheese and place the other slice of bread on top.
- Brush the outside of the sandwich with olive oil.
- Place the sandwich in the skillet and cook until golden brown, about 3-4 minutes per side.
- Remove from heat, slice, and serve warm.
