A delicious and nutritious Sweet Potato & Lentil Curry that combines the sweetness of sweet potatoes with the heartiness of lentils, perfect for a comforting meal.

- 2 medium sweet potatoes, peeled and diced
- 1 cup red lentils, rinsed
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 inch ginger, grated
- 1 can coconut milk (400ml)
- 2 cups vegetable broth
- 2 tablespoons curry powder
- 1 teaspoon turmeric
- Salt and pepper to taste
- Fresh cilantro for garnish
Instructions
- In a large pot, sauté the onion, garlic, and ginger until fragrant.
- Add the diced sweet potatoes and cook for a few minutes.
- Stir in the curry powder and turmeric, cooking for another minute.
- Add the rinsed lentils, coconut milk, and vegetable broth.
- Bring to a boil, then reduce heat and simmer for 20-25 minutes until lentils and sweet potatoes are tender.
- Season with salt and pepper to taste.
- Serve hot, garnished with fresh cilantro.
Notes
- For a spicier version, add chili powder or fresh chilies.
- This dish can be served with rice or naan for a complete meal.
- Leftovers can be stored in the refrigerator for up to 3 days.
