- 1 cup milk
- 1 large egg
- 2 tablespoons melted butter
- Maple syrup for drizzling
Instructions
- In a large bowl, combine the mashed sweet potatoes, flour, baking powder, salt, cinnamon, and nutmeg.
- In another bowl, whisk together the milk, egg, and melted butter.
- Pour the wet ingredients into the dry ingredients and mix until just combined.
- Heat a non-stick skillet over medium heat and lightly grease it.
- Pour 1/4 cup of batter onto the skillet for each pancake.
- Cook until bubbles form on the surface, then flip and cook until golden brown.
- Serve warm with a drizzle of maple syrup.
Notes
- For a vegan option, substitute milk with almond milk and egg with a flax egg.
- Make sure the sweet potatoes are well-mashed for a smooth batter.
