Taco-Stuffed Bell Peppers are a delicious and healthy twist on traditional tacos, filled with seasoned ground meat, beans, and topped with cheese.


Ingredients

  • 4 large bell peppers
  • 1 lb ground beef or turkey
  • 1 can black beans, drained and rinsed
  • 1 cup corn
  • 1 packet taco seasoning
  • 1 cup shredded cheese
  • 1 cup salsa
  • Fresh cilantro for garnish

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Cut the tops off the bell peppers and remove the seeds.
  3. In a skillet, cook the ground meat until browned, then drain excess fat.
  4. Add black beans, corn, taco seasoning, and salsa to the skillet, mixing well.
  5. Stuff each bell pepper with the meat mixture.
  6. Place the stuffed peppers in a baking dish and cover with foil.
  7. Bake for 25 minutes, then remove foil and sprinkle cheese on top.
  8. Bake for an additional 10 minutes until cheese is melted and bubbly.
  9. Garnish with fresh cilantro before serving.
