- 4 large bell peppers
- 1 lb ground beef or turkey
- 1 can black beans, drained and rinsed
- 1 cup corn
- 1 packet taco seasoning
- 1 cup shredded cheese
- 1 cup salsa
- Fresh cilantro for garnish
Instructions
- Preheat the oven to 375°F (190°C).
- Cut the tops off the bell peppers and remove the seeds.
- In a skillet, cook the ground meat until browned, then drain excess fat.
- Add black beans, corn, taco seasoning, and salsa to the skillet, mixing well.
- Stuff each bell pepper with the meat mixture.
- Place the stuffed peppers in a baking dish and cover with foil.
- Bake for 25 minutes, then remove foil and sprinkle cheese on top.
- Bake for an additional 10 minutes until cheese is melted and bubbly.
- Garnish with fresh cilantro before serving.
