Description

Taco-Stuffed Bell Peppers are a delicious and healthy dinner option, filled with seasoned ground meat, beans, and topped with cheese.


Ingredients

  • 4 large bell peppers
  • 1 lb ground beef or turkey
  • 1 can black beans, drained and rinsed
  • 1 cup corn
  • 1 packet taco seasoning
  • 1 cup shredded cheese
  • 1 cup salsa
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Cut the tops off the bell peppers and remove the seeds.
  3. In a skillet, cook the ground meat over medium heat until browned.
  4. Add the black beans, corn, taco seasoning, salt, and pepper to the skillet and mix well.
  5. Stuff the bell peppers with the meat mixture.
  6. Place the stuffed peppers in a baking dish and pour salsa over the top.
  7. Cover with foil and bake for 25 minutes.
  8. Remove the foil, sprinkle cheese on top, and bake for an additional 10 minutes until the cheese is melted.
