Ingredients

- 4 large bell peppers
- 1 lb ground beef or turkey
- 1 can black beans, drained and rinsed
- 1 cup corn
- 1 packet taco seasoning
- 1 cup shredded cheese
- 1 cup salsa
- Salt and pepper to taste
Instructions
- Preheat the oven to 375°F (190°C).
- Cut the tops off the bell peppers and remove the seeds.
- In a skillet, cook the ground meat over medium heat until browned.
- Add the black beans, corn, taco seasoning, salt, and pepper to the skillet and mix well.
- Stuff the bell peppers with the meat mixture.
- Place the stuffed peppers in a baking dish and pour salsa over the top.
- Cover with foil and bake for 25 minutes.
- Remove the foil, sprinkle cheese on top, and bake for an additional 10 minutes until the cheese is melted.

- Feel free to customize the filling with your favorite ingredients.
- These can be made ahead of time and stored in the refrigerator before baking.
- Serve with sour cream or guacamole for added flavor.
