Ingredients

  • 1 cup bell peppers, sliced
  • 1 cup carrots, julienned
  • 1 cup broccoli florets
  • 1/2 cup green onions, chopped
  • 1/2 cup peanut butter
  • 1/4 cup soy sauce
  • 2 tbsp lime juice
  • 1 tbsp sesame oil
  • 1 tbsp honey or maple syrup
  • 1 clove garlic, minced
  • 1 tsp ginger, grated
  • Chili flakes to taste

Instructions

  1. Cook the rice noodles according to package instructions, then drain and set aside.
  2. In a large bowl, whisk together peanut butter, soy sauce, lime juice, sesame oil, honey, garlic, ginger, and chili flakes until smooth.
  3. Add the cooked noodles to the bowl and toss to coat them in the peanut sauce.
  4. In a skillet, sauté the bell peppers, carrots, and broccoli over medium heat until tender.
  5. Add the sautéed vegetables to the noodles and mix well.
  6. Garnish with chopped green onions before serving.

Notes
