- 8 oz rice noodles
- 1 cup bell peppers, sliced
- 1 cup carrots, julienned
- 1 cup broccoli florets
- 1/2 cup green onions, chopped
- 1/2 cup peanut butter
- 1/4 cup soy sauce
- 2 tbsp lime juice
- 1 tbsp sesame oil
- 1 tbsp honey or maple syrup
- 1 clove garlic, minced
- 1 tsp ginger, grated
- Chili flakes to taste
Instructions
- Cook the rice noodles according to package instructions, then drain and set aside.
- In a large bowl, whisk together peanut butter, soy sauce, lime juice, sesame oil, honey, garlic, ginger, and chili flakes until smooth.
- Add the cooked noodles to the bowl and toss to coat them in the peanut sauce.
- In a skillet, sauté the bell peppers, carrots, and broccoli over medium heat until tender.
- Add the sautéed vegetables to the noodles and mix well.
- Garnish with chopped green onions before serving.
Notes
- For a spicier version, add more chili flakes or a dash of sriracha.
- This dish can be served warm or cold.
