Tiki Torch

  • Author: Jessica
  • Total Time: 5 minutes

Ingredients

Liquids:

  • 1 oz dark rum

  • 1 oz overproof rum (like Wray & Nephew or Lemon Hart 151)

  • 1 oz pineapple juice

  • ¾ oz fresh lime juice

  • ½ oz passion fruit syrup

  • ½ oz simple syrup

  • Dash of aromatic bitters

Ice:

  • Ice cubes or crushed ice

Garnish:

  • Pineapple leaf

  • Lime wheel

  • Optional flaming lime shell (see below for how-to)

🔥 Safety Note: Always use caution when working with fire. Use overproof rum for the flame, light it safely, and blow it out before drinking.

Instructions

Step 1: Fill the Shaker

Add the dark rumpineapple juicelime juicepassion fruit syrupsimple syrup, and a dash of bitters into a cocktail shaker filled with ice.

Step 2: Shake It Well

Shake vigorously for 10–15 seconds to chill the ingredients and mix them thoroughly.

Step 3: Pour and Float

Strain into a tiki mug or a rocks glass filled with fresh ice or crushed ice. Gently float the overproof rum on top for added intensity and to support the flame if you’re igniting it.

Step 4: Garnish with Flair

Top with a pineapple leaf, a lime wheel, and — if you’re going all in — a flaming lime shell.

How to Make the Flaming Lime Shell (Optional)

  1. Cut a lime in half and squeeze out the juice.

  2. Place one half of the hollowed lime shell in the center of the drink.

  3. Fill it with ¼ to ½ tsp of overproof rum.

  4. Carefully light it with a long match or lighter.

  5. Serve immediately and blow out the flame before sipping.

⚠️ Never drink the cocktail while the flame is still burning. Ensure all flames are extinguished first.

Notes

  • Dark rum brings a smoky, molasses-heavy base that anchors the drink.

  • Overproof rum adds power — both in alcohol and theatrics.

  • Passion fruit syrup gives a vibrant tropical sweetness that plays beautifully against the acidity of lime juice.

  • Bitters deepen the complexity and round out the sweetness.

  • Pineapple juice lifts the whole drink, making it bright and refreshing.

This drink is bold, layered, and vibrant — just like every good tiki drink should be.
