- 1/2 cup mascarpone cheese

Instructions
- Preheat the oven to 350°F (175°C).
- In a bowl, cream together the softened butter, granulated sugar, and brown sugar until light and fluffy.
- Add the egg, vanilla extract, and instant coffee granules, mixing until well combined.
- In another bowl, whisk together the flour, cocoa powder, baking powder, and salt.
- Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
- Fold in the mascarpone cheese until evenly distributed.
- Drop spoonfuls of dough onto a baking sheet lined with parchment paper.
- Bake for 10-12 minutes or until the edges are set.
- Allow to cool slightly before dusting with cocoa powder.
Notes
- For a stronger coffee flavor, increase the amount of instant coffee granules.
- These cookies can be stored in an airtight container for up to a week.
- Consider adding chocolate chips for extra richness.
