Description

A delicious and easy-to-make tomato basil sauce perfect for canning.


Ingredients

  • 10 pounds ripe tomatoes
  • 1 cup fresh basil leaves, chopped
  • 1 medium onion, finely chopped
  • 4 cloves garlic, minced
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 tablespoon lemon juice

Instructions

  1. Wash and core the tomatoes, then cut them into quarters.
  2. In a large pot, heat olive oil over medium heat and sauté the onions and garlic until translucent.
  3. Add the tomatoes, basil, salt, and pepper to the pot.
  4. Simmer the mixture for about 30 minutes, stirring occasionally.
  5. Use an immersion blender to puree the sauce to your desired consistency.
  6. Add lemon juice and stir well.
  7. Pour the hot sauce into sterilized canning jars, leaving 1/2 inch headspace.
  8. Seal the jars and process in a boiling water bath for 35 minutes.

Notes

  • Ensure all jars and lids are properly sterilized before use.
  • Adjust seasoning to taste before canning.
  • Store canned sauce in a cool, dark place.
