A delicious and easy-to-make tomato basil sauce perfect for canning.
Ingredients

- 10 pounds ripe tomatoes
- 1 cup fresh basil leaves, chopped
- 1 medium onion, finely chopped
- 4 cloves garlic, minced
- 2 tablespoons olive oil
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 tablespoon lemon juice
Instructions
- Wash and core the tomatoes, then cut them into quarters.
- In a large pot, heat olive oil over medium heat and sauté the onions and garlic until translucent.
- Add the tomatoes, basil, salt, and pepper to the pot.
- Simmer the mixture for about 30 minutes, stirring occasionally.
- Use an immersion blender to puree the sauce to your desired consistency.
- Add lemon juice and stir well.
- Pour the hot sauce into sterilized canning jars, leaving 1/2 inch headspace.
- Seal the jars and process in a boiling water bath for 35 minutes.
Notes
- Ensure all jars and lids are properly sterilized before use.
- Adjust seasoning to taste before canning.
- Store canned sauce in a cool, dark place.
