- 1 cup light corn syrup
- 1 cup packed brown sugar
- 1/3 cup unsalted butter, melted
- 4 large eggs
- 1 teaspoon vanilla extract
- 1 1/2 cups pecan halves
Instructions
- Preheat your oven to 350°F (175°C).
- In a mixing bowl, combine flour, sugar, and salt for the crust. Cut in butter until the mixture resembles coarse crumbs.
- Stir in ice water, a tablespoon at a time, until the dough forms a ball. Wrap in plastic and refrigerate for 30 minutes.
- Roll out the dough on a floured surface to fit a 9-inch pie pan. Place the crust in the pan and trim excess.
- In another bowl, whisk together corn syrup, brown sugar, melted butter, eggs, and vanilla until smooth.
- Stir in pecans and pour the filling into the prepared crust.
- Bake in the preheated oven for 60-70 minutes, or until the filling is set and the top is golden brown. The pie should jiggle slightly in the center.
- Let cool completely before serving to allow the filling to firm up.
