- 1 cup jasmine rice
- 1 cup coconut milk
- 1 cup pineapple juice
- 1 cup diced fresh pineapple
- 1/2 teaspoon salt
- 1 tablespoon sugar (optional)
- 1/4 cup chopped fresh cilantro (for garnish)
Instructions
- Rinse the jasmine rice under cold water until the water runs clear.
- In a medium saucepan, combine the rinsed rice, coconut milk, pineapple juice, salt, and sugar (if using).
- Bring the mixture to a boil over medium heat.
- Once boiling, reduce the heat to low, cover, and simmer for 15-20 minutes or until the rice is tender and the liquid is absorbed.
- Remove from heat and let it sit covered for 5 minutes.
- Fluff the rice with a fork and gently fold in the diced pineapple.
- Garnish with chopped cilantro before serving.
Notes
- For a richer flavor, use full-fat coconut milk.
- This dish pairs well with grilled meats or seafood.
- Leftovers can be stored in an airtight container in the refrigerator for up to 3 days.
