Ingredients

  • 1 cup jasmine rice
  • 1 cup coconut milk
  • 1 cup pineapple juice
  • 1 cup diced fresh pineapple
  • 1/2 cup shredded coconut
  • 1 tablespoon sugar
  • 1/4 teaspoon salt
  • 1 tablespoon chopped fresh cilantro (optional)

Instructions

  1. Rinse the jasmine rice under cold water until the water runs clear.
  2. In a medium saucepan, combine the rinsed rice, coconut milk, pineapple juice, sugar, and salt.
  3. Bring the mixture to a boil over medium heat.
  4. Once boiling, reduce the heat to low, cover, and simmer for 15-20 minutes or until the rice is tender and the liquid is absorbed.
  5. Remove from heat and let it sit covered for 5 minutes.
  6. Fluff the rice with a fork and stir in the diced pineapple and shredded coconut.
  7. Garnish with chopped cilantro if desired and serve warm.

Notes

  • For a richer flavor, use full-fat coconut milk.
  • Adjust the sweetness by adding more or less sugar based on your preference.
