- 3–4 Bell Peppers (red, green, yellow, or orange)
- 1 lb Ground Beef or Turkey
- 1 Onion (chopped)
- 2–3 cloves Garlic (minced)
- 1 can Diced Tomatoes
- 1 cup Cooked Rice (optional)
- 1 tsp Italian Seasoning
- Salt and Pepper to taste
- 1 cup Cheese (mozzarella or cheddar, optional)
- Olive Oil
Instructions
- Preheat your oven to 375°F (190°C).
- Slice the bell peppers in half lengthwise and place them cut-side up in a baking dish.
- Heat olive oil in a skillet over medium heat. Sauté chopped onion and minced garlic until translucent, about 3-5 minutes.
- Add ground meat and cook until browned, approximately 7-10 minutes.
- Stir in diced tomatoes, Italian seasoning, salt, and pepper. Simmer for about 5 minutes.
- If using, mix in cooked rice.
- Fill each pepper half with the meat mixture.
- Cover with foil and bake for 25-30 minutes.
- Remove foil, sprinkle cheese if using, and bake for an additional 5-10 minutes.
- Serve hot and enjoy!
Notes
Make the filling ahead of time and store it in the fridge overnight. You can cook the peppers in an air fryer at 350°F for 15-20 minutes if you’re short on oven time.
