Description

A delightful and simplified take on the classic stuffed peppers, combining bell peppers, ground meat, rice, and melty cheese for a comforting meal.


Ingredients

  • 34 Bell Peppers (red, green, yellow, or orange)
  • 1 lb Ground Beef or Turkey
  • 1 Onion (chopped)
  • 23 cloves Garlic (minced)
  • 1 can Diced Tomatoes
  • 1 cup Cooked Rice (optional)
  • 1 tsp Italian Seasoning
  • Salt and Pepper to taste
  • 1 cup Cheese (mozzarella or cheddar, optional)
  • Olive Oil

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Slice the bell peppers in half lengthwise and place them cut-side up in a baking dish.
  3. Heat olive oil in a skillet over medium heat. Sauté chopped onion and minced garlic until translucent, about 3-5 minutes.
  4. Add ground meat and cook until browned, approximately 7-10 minutes.
  5. Stir in diced tomatoes, Italian seasoning, salt, and pepper. Simmer for about 5 minutes.
  6. If using, mix in cooked rice.
  7. Fill each pepper half with the meat mixture.
  8. Cover with foil and bake for 25-30 minutes.
  9. Remove foil, sprinkle cheese if using, and bake for an additional 5-10 minutes.
  10. Serve hot and enjoy!

Notes

Make the filling ahead of time and store it in the fridge overnight. You can cook the peppers in an air fryer at 350°F for 15-20 minutes if you’re short on oven time.
