Description
Vampire’s Blood Cheesecake Bars are a deliciously spooky dessert perfect for Halloween or any themed party. These bars feature a creamy cheesecake layer with a rich, red raspberry swirl that resembles blood, all on a graham cracker crust.

- 1 ½ cups graham cracker crumbs
- ½ cup unsalted butter, melted
- 2 cups cream cheese, softened
- 1 cup granulated sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- 1 cup raspberry puree
- 2 tablespoons cornstarch
Instructions
- Preheat the oven to 325°F (160°C).
- In a bowl, mix graham cracker crumbs and melted butter until combined, then press into the bottom of a greased baking pan.
- In a large mixing bowl, beat the cream cheese and sugar until smooth.
- Add eggs one at a time, mixing well after each addition, then stir in vanilla extract.
- In a separate bowl, mix raspberry puree with cornstarch until smooth.
- Pour the cheesecake mixture over the crust, then drop spoonfuls of raspberry puree on top and swirl with a knife.
- Bake for 30-35 minutes or until the center is set.
- Allow to cool, then refrigerate for at least 4 hours before cutting into bars.
Notes
- For a more intense raspberry flavor, use fresh raspberries instead of puree.
- These bars can be made a day in advance for easier serving.
- Garnish with chocolate shavings or whipped cream for an extra treat.
