- 4 large russet potatoes
- 1 cup black beans, rinsed and drained
- 1 cup corn kernels
- 1 cup diced tomatoes
- 1 avocado, diced
- 1/2 cup vegan cheese shreds
- 1/4 cup green onions, chopped
- 1 tablespoon olive oil
- 1 teaspoon chili powder
- Salt and pepper to taste
Instructions
- Preheat the oven to 400°F (200°C).
- Wash and scrub the potatoes, then pierce them with a fork.
- Rub the potatoes with olive oil, salt, and pepper.
- Bake the potatoes for 45-60 minutes until tender.
- Once baked, let them cool slightly, then cut them in half and scoop out some of the flesh.
- Mix the scooped potato flesh with black beans, corn, diced tomatoes, chili powder, and season with salt and pepper.
- Fill the potato skins with the mixture and top with vegan cheese shreds.
- Return to the oven and bake for an additional 10-15 minutes until the cheese is melted.
- Garnish with diced avocado and chopped green onions before serving.
