Vegan Nacho Potato Skins are a delicious and guilt-free snack that combines crispy potato skins with flavorful vegan toppings, perfect for any occasion.


Ingredients

  • 4 large russet potatoes
  • 1 cup black beans, rinsed and drained
  • 1 cup corn kernels
  • 1 cup diced tomatoes
  • 1 avocado, diced
  • 1/2 cup vegan cheese shreds
  • 1/4 cup green onions, chopped
  • 1 tablespoon olive oil
  • 1 teaspoon chili powder
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Wash and scrub the potatoes, then pierce them with a fork.
  3. Rub the potatoes with olive oil, salt, and pepper.
  4. Bake the potatoes for 45-60 minutes until tender.
  5. Once baked, let them cool slightly, then cut them in half and scoop out some of the flesh.
  6. Mix the scooped potato flesh with black beans, corn, diced tomatoes, chili powder, and season with salt and pepper.
  7. Fill the potato skins with the mixture and top with vegan cheese shreds.
  8. Return to the oven and bake for an additional 10-15 minutes until the cheese is melted.
  9. Garnish with diced avocado and chopped green onions before serving.
