Ingredients
- Watermelon rind – 4 cups
- Granulated sugar – 2 cups
- White vinegar – 1 cup
- Water – 1 cup
- Salt – 1 tablespoon
- Ground cinnamon – 1 teaspoon
- Whole cloves – 1 teaspoon
- Ginger – 1 teaspoon
Instructions
- Prepare the watermelon rind by removing the green skin and cutting it into small pieces.
- In a large pot, combine the sugar, vinegar, water, and salt. Bring to a boil.
- Add the watermelon rind pieces to the pot and simmer for about 10 minutes.
- Add the spices (cinnamon, cloves, and ginger) and continue to simmer for another 10 minutes.
- Remove from heat and let cool slightly.
- Transfer the pickles into sterilized jars and seal them tightly.
- Refrigerate for at least 24 hours before serving to allow the flavors to meld.
