Description
A refreshing and creamy pink lemonade infused with fresh raspberries, perfect for summer gatherings.
Ingredients

- 1 cup fresh lemon juice (about 4–5 lemons)
- 1 cup granulated sugar
- 4 cups cold water
- 1 cup fresh raspberries (plus extra for garnish)
- 1 cup heavy whipping cream
- 0.5 teaspoon vanilla extract, to taste
- Ice cubes
Instructions
- In a blender, combine the fresh lemon juice, sugar, raspberries, and 1 cup of cold water. Blend until smooth and well combined.
- Strain the mixture through a fine mesh sieve into a large pitcher, removing any seeds and pulp.
- Add the remaining 3 cups of cold water to the pitcher and stir well. Adjust sweetness by adding more sugar as needed.
- In a separate mixing bowl, pour in the heavy whipping cream. Add the vanilla extract and whip until soft peaks form.
- Gently fold in about 1 cup of the lemonade mixture into the whipped cream.
- To serve, fill glasses with ice cubes and pour in the lemonade mixture, filling them about three-quarters full. Top each glass with the whipped pink mixture and garnish with fresh raspberries and a slice of lemon.
Notes
Prepare the lemonade mixture a day in advance and store it in the refrigerator. Whip the cream just before serving.
