Instructions
- In a large pot, heat olive oil over medium heat. Add diced onion and sauté until translucent, about 5 minutes.

- Stir in shredded chicken, chicken broth, diced tomatoes, Italian seasoning, salt, and pepper. Bring to a boil.
- Add broken lasagna noodles and reduce heat to a simmer. Cook for 10-12 minutes, or until noodles are tender.
- In a separate bowl, combine ricotta, mozzarella, Parmesan, and parsley. Stir until well mixed.
- Once the noodles are cooked, drop spoonfuls of the cheese mixture into the soup. Allow it to melt slightly before serving.
- Serve hot, garnished with additional parsley if desired.
