- 1 teaspoon celery seeds
Instructions
- Prepare the zucchini by grating it and placing it in a large bowl.
- Add chopped onion and green bell pepper to the bowl.
- Sprinkle salt over the vegetables and let them sit for 2 hours.
- Drain the mixture and rinse with cold water.
- In a large pot, combine vinegar, sugar, mustard seeds, turmeric, and celery seeds.
- Bring the mixture to a boil, then add the drained vegetables.
- Simmer for 30 minutes, stirring occasionally.
- Pour the hot relish into sterilized jars and seal them.
- Process the jars in a boiling water bath for 10 minutes.
