- 1 1/2 cups all-purpose flour
- 1/2 cup almond flour
- 1/4 cup poppy seeds
- 1 cup sugar
- 1 tablespoon baking powder
- 1/2 teaspoon salt
- 2 large eggs
- 1 cup milk
- 1/2 cup vegetable oil
- 1 teaspoon almond extract
- 1/2 cup sliced almonds
- 1/4 cup brown sugar (for streusel topping)
- 1/4 cup melted butter (for streusel topping)
- 1/2 cup flour (for streusel topping)
Instructions
- Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners.
- Whisk together all-purpose flour, almond flour, poppy seeds, sugar, baking powder, and salt in a large bowl.
- Mix the eggs, milk, vegetable oil, and almond extract until well combined in another bowl.
- Pour the wet ingredients into the dry ingredients and stir until just combined.
- Combine the ingredients for the streusel topping in a small bowl: sliced almonds, brown sugar, melted butter, and flour.
- Fill each muffin cup about 2/3 full with the batter.
- Sprinkle the streusel topping generously over each muffin.
- Bake for 18-20 minutes or until a toothpick inserted into the center of a muffin comes out clean.
- Allow the muffins to cool in the pan for a few minutes before transferring them to a wire rack.
- Enjoy warm or at room temperature!
Notes
Make-ahead tips: Prepare the batter and store it in the fridge overnight. For air-fried versions, adjust the temperature to 320°F (160°C) and check for doneness after 12-15 minutes.
