Description

Ingredients

  • 1/2 cup almond flour
  • 1/4 cup poppy seeds
  • 1 cup sugar
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 2 large eggs
  • 1 cup milk
  • 1/2 cup vegetable oil
  • 1 teaspoon almond extract
  • 1/2 cup sliced almonds
  • 1/4 cup brown sugar (for streusel topping)
  • 1/4 cup melted butter (for streusel topping)
  • 1/2 cup flour (for streusel topping)

Instructions

  1. Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners.
  2. Whisk together all-purpose flour, almond flour, poppy seeds, sugar, baking powder, and salt in a large bowl.
  3. Mix the eggs, milk, vegetable oil, and almond extract until well combined in another bowl.
  4. Pour the wet ingredients into the dry ingredients and stir until just combined.
  5. Combine the ingredients for the streusel topping in a small bowl: sliced almonds, brown sugar, melted butter, and flour.
  6. Fill each muffin cup about 2/3 full with the batter.
  7. Sprinkle the streusel topping generously over each muffin.
  8. Bake for 18-20 minutes or until a toothpick inserted into the center of a muffin comes out clean.
  9. Allow the muffins to cool in the pan for a few minutes before transferring them to a wire rack.
  10. Enjoy warm or at room temperature!

Notes

Make-ahead tips: Prepare the batter and store it in the fridge overnight. For air-fried versions, adjust the temperature to 320°F (160°C) and check for doneness after 12-15 minutes.
