- 1 1/2 cups vanilla wafers
- 1/4 cup melted butter
- 4 ripe bananas
- 2 cups milk
- 1/2 cup granulated sugar
- 1/3 cup cornstarch
- 1/4 teaspoon salt
- 3 large eggs
- 1 teaspoon vanilla extract
- 1 cup heavy cream
- 1/4 cup powdered sugar
Instructions
- Preheat your oven to 350°F (175°C).
- Combine the crushed vanilla wafers and melted butter in a mixing bowl.
- Press the mixture into the bottom of your pie pan and bake for 10 minutes.
- Allow the crust to cool completely.
- Slice the bananas and layer them over the cooled crust.
- Combine the milk, sugar, cornstarch, and salt in a saucepan, cooking over medium heat.
- Whisk constantly until thickened, then add the eggs and vanilla, cooking for 2 more minutes.
- Pour the warm pudding over the bananas.
- Whip the heavy cream with powdered sugar until stiff peaks form.
- Spread the whipped cream over the pudding layer and chill for at least 2 hours.
Notes
Chill the pie overnight for best flavor and texture. Adjust sweetness to your preference.
