Ingredients

  • 1 1/2 cups vanilla wafers
  • 1/4 cup melted butter
  • 4 ripe bananas
  • 2 cups milk
  • 1/2 cup granulated sugar
  • 1/3 cup cornstarch
  • 1/4 teaspoon salt
  • 3 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup heavy cream
  • 1/4 cup powdered sugar

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Combine the crushed vanilla wafers and melted butter in a mixing bowl.
  3. Press the mixture into the bottom of your pie pan and bake for 10 minutes.
  4. Allow the crust to cool completely.
  5. Slice the bananas and layer them over the cooled crust.
  6. Combine the milk, sugar, cornstarch, and salt in a saucepan, cooking over medium heat.
  7. Whisk constantly until thickened, then add the eggs and vanilla, cooking for 2 more minutes.
  8. Pour the warm pudding over the bananas.
  9. Whip the heavy cream with powdered sugar until stiff peaks form.
  10. Spread the whipped cream over the pudding layer and chill for at least 2 hours.

Notes

Chill the pie overnight for best flavor and texture. Adjust sweetness to your preference.
