Ingredients

  • 1 ripe avocado, sliced

Instructions

  1. Combine sweet corn, black beans, diced red bell peppers, and crumbled feta cheese in a large bowl.
  2. Whisk together lime juice, olive oil, and honey in a separate bowl.
  3. Pour the dressing over the salad mixture, tossing gently to coat.
  4. Add fresh cilantro and mix gently.
  5. Top with sliced avocado just before serving.
