- 3 ripe bananas, mashed
- 1/2 cup brown sugar
- 1/2 cup granulated sugar
- 1/3 cup melted butter
- 2 large eggs
- 1 teaspoon vanilla extract
- 1 teaspoon baking soda
- 1/4 teaspoon salt
- 1 1/2 cups all-purpose flour
- 1/2 cup brewed coffee, cooled
- 1/4 cup salted caramel sauce
- 1/4 cup brown sugar for glaze
Instructions
- Preheat your oven to 350°F (175°C) and grease your loaf pan generously.
- Combine the mashed bananas, melted butter, brown sugar, and granulated sugar in a large bowl until smooth.
- Add the eggs and vanilla extract, mixing well.
- Whisk together the baking soda, salt, and flour in a separate bowl.
- Gradually add dry ingredients to the banana mixture, alternating with brewed coffee and salted caramel sauce; blend until just combined.
- Pour the batter into the prepared loaf pan and smooth the top.
- Bake for 55–60 minutes, or until a toothpick inserted comes out clean.
- Let the loaf cool in the pan for about 10 minutes before removing.
- In a small saucepan, melt brown sugar with a bit of butter for the glaze, then drizzle it over the cooled bread.
Notes
For a vegan version, replace eggs with flax eggs and use plant-based butter.
