Ingredients

- 1 cup quinoa
- 2 cups water
- 1 cup cherries, pitted and halved
- 1/2 cup sugar snap peas, trimmed and sliced
- 1/4 cup red onion, thinly sliced
- 1/2 cup goat cheese, crumbled
- 2 tablespoons apple cider vinegar
- 1 tablespoon lemon juice
- Salt and pepper to taste
Instructions
- Rinse the quinoa under cold water in a fine mesh strainer.
- Cook the quinoa in a medium saucepan with 2 cups of water, bringing it to a boil then simmering for 15 minutes.
- Cool the cooked quinoa completely.
- Combine the cooled quinoa with cherries, sugar snap peas, red onion, and goat cheese in a large bowl.
- Whisk together the apple cider vinegar, lemon juice, salt, and pepper in a small bowl.
- Dress the salad with the dressing and toss gently until coated.
- Serve chilled.
Notes
This salad can be made ahead of time and store well for up to 3 days in the fridge. Customize by using feta cheese or seasonal fruits.
