Description

A vibrant salad that combines sweet cherries, nutty quinoa, and creamy goat cheese for a refreshing and nutritious dish.


Ingredients

  • 1 cup quinoa
  • 2 cups water
  • 1 cup cherries, pitted and halved
  • 1/2 cup sugar snap peas, trimmed and sliced
  • 1/4 cup red onion, thinly sliced
  • 1/2 cup goat cheese, crumbled
  • 2 tablespoons apple cider vinegar
  • 1 tablespoon lemon juice
  • Salt and pepper to taste

Instructions

  1. Rinse the quinoa under cold water in a fine mesh strainer.
  2. Cook the quinoa in a medium saucepan with 2 cups of water, bringing it to a boil then simmering for 15 minutes.
  3. Cool the cooked quinoa completely.
  4. Combine the cooled quinoa with cherries, sugar snap peas, red onion, and goat cheese in a large bowl.
  5. Whisk together the apple cider vinegar, lemon juice, salt, and pepper in a small bowl.
  6. Dress the salad with the dressing and toss gently until coated.
  7. Serve chilled.

Notes

This salad can be made ahead of time and store well for up to 3 days in the fridge. Customize by using feta cheese or seasonal fruits.
