- 4 cups mixed salad greens (arugula, spinach, romaine)
- 1 cup cherry tomatoes, halved
- 1 cucumber, diced
- 1 red onion, thinly sliced
- 1 bell pepper, sliced
- 1/4 cup fresh parsley, chopped
- 1/2 cup Greek yogurt
- 2 tablespoons tahini
- 1 tablespoon lemon juice
- 1 teaspoon garlic powder
- 1 teaspoon paprika
- Salt and pepper to taste
- Olive oil for drizzling
Instructions
- Whip up the dressing: In a small bowl, combine Greek yogurt, tahini, lemon juice, garlic powder, paprika, salt, and pepper. Whisk until the mixture is smooth.
