Ingredients

- 1 cup rice
- 2 cups chicken broth
- 1 lb chicken breast, diced
- 1 cup cilantro, chopped
- 1 lime, juiced
- 1 can black beans, rinsed and drained
- 1 cup sweet corn
- 1 red bell pepper, diced
- 2 tablespoons olive oil
- Salt and pepper to taste
Instructions
- Heat the olive oil in a large skillet over medium heat.
- Add the diced chicken and season with salt and pepper. Sauté until golden brown, about 5-7 minutes.
- Stir in the diced red bell pepper, black beans, and sweet corn. Cook for an additional 2 minutes.
- Pour in the rice and chicken broth, stirring to combine. Bring to a boil.
- Reduce the heat to low, cover, and simmer for about 15 minutes or until rice is fluffy.
- Remove from heat and stir in cilantro and lime juice.
- Taste and adjust salt and pepper if needed. Serve immediately.
Notes
Store leftovers in an airtight container for up to three days. Freeze in portion-sized containers for up to three months.
