Description

A vibrant dish combining tender chicken, aromatic cilantro, and zesty lime, served over fluffy rice with black beans and sweet corn.


Ingredients

  • 1 cup rice
  • 2 cups chicken broth
  • 1 lb chicken breast, diced
  • 1 cup cilantro, chopped
  • 1 lime, juiced
  • 1 can black beans, rinsed and drained
  • 1 cup sweet corn
  • 1 red bell pepper, diced
  • 2 tablespoons olive oil
  • Salt and pepper to taste

Instructions

  1. Heat the olive oil in a large skillet over medium heat.
  2. Add the diced chicken and season with salt and pepper. Sauté until golden brown, about 5-7 minutes.
  3. Stir in the diced red bell pepper, black beans, and sweet corn. Cook for an additional 2 minutes.
  4. Pour in the rice and chicken broth, stirring to combine. Bring to a boil.
  5. Reduce the heat to low, cover, and simmer for about 15 minutes or until rice is fluffy.
  6. Remove from heat and stir in cilantro and lime juice.
  7. Taste and adjust salt and pepper if needed. Serve immediately.

Notes

Store leftovers in an airtight container for up to three days. Freeze in portion-sized containers for up to three months.
