Ingredients

  • 4 boneless, skinless chicken breasts
  • 1/2 cup fresh cilantro, chopped
  • 1/4 cup fresh lime juice
  • 2 tbsp olive oil
  • 1 tsp garlic powder
  • Salt and pepper to taste
  • 8 corn or flour tortillas
  • Optional toppings: diced tomatoes, shredded lettuce, cheese, avocado, sour cream

Instructions

  1. Combine cilantro, lime juice, olive oil, garlic powder, salt, and pepper in a mixing bowl to make the marinade.
  2. Soak chicken breasts in the marinade for at least 30 minutes.
  3. Preheat the grill to medium-high heat.
  4. Grill the chicken for 6-7 minutes on each side, until the internal temperature reaches 165°F (75°C).
  5. Remove the chicken from the grill and let it rest for 5 minutes before slicing.
  6. Warm the tortillas on the grill for 30 seconds on each side.
  7. Assemble the tacos with sliced chicken and your choice of toppings.
