Description
Homemade cinnamon raisin bagels with a chewy texture and a delightful hint of sweetness from raisins.
Ingredients
Scale
- 4 cups bread flour
- 1 tablespoon sugar
- 1 teaspoon salt
- 1 tablespoon cinnamon
- 1 packet (2¼ teaspoons) active dry yeast
- 1½ cups warm water
- 1 cup raisins
- 1 tablespoon malt syrup (optional)
- Sesame seeds or everything bagel seasoning (optional, for topping)
Instructions
- Activate the yeast: In a large bowl, combine the warm water, yeast, and sugar. Allow it to sit until bubbly and frothy, about 5 minutes.
- Combine dry ingredients: In a separate bowl, mix together the bread flour, salt, and cinnamon.
- Form the dough: Gradually add the dry ingredients into the yeast mixture, stirring until a rough dough forms.
- Knead the dough: Transfer the dough onto a floured surface and knead for approximately 10 minutes.
- Add the raisins: Gently fold in the raisins.
- Let it rise: Place your dough in a greased bowl, cover it with a kitchen towel, and let it rise until it doubles in size, about 1 hour.
- Preheat the oven: As the dough rises, preheat your oven to 425°F (220°C).
- Prepare to boil: In a large pot, bring water to a boil and stir in the malt syrup if using.
- Shape the bagels: Punch down the dough, divide it into 8 equal pieces, and shape into bagels.
- Boil the bagels: Carefully place each bagel into the boiling water, letting them boil for 1-2 minutes on each side.
- Prepare for baking: Transfer the boiled bagels onto a baking sheet lined with parchment paper.
- Bake to perfection: Bake for 20-25 minutes until golden brown.
- Cool and serve: Allow the bagels to cool on a wire rack before enjoying.
Notes
You can prepare the dough a day in advance and let it rise in the fridge overnight. Feel free to experiment with different flavors by adding nuts or different dried fruits.
