Description

Homemade cinnamon raisin bagels with a chewy texture and a delightful hint of sweetness from raisins.


Ingredients

  • 1 tablespoon sugar

  • 1 tablespoon cinnamon
  • 1 packet (2¼ teaspoons) active dry yeast
  • 1½ cups warm water
  • 1 cup raisins
  • 1 tablespoon malt syrup (optional)
  • Sesame seeds or everything bagel seasoning (optional, for topping)

Instructions

  1. Activate the yeast: In a large bowl, combine the warm water, yeast, and sugar. Allow it to sit until bubbly and frothy, about 5 minutes.
  2. Combine dry ingredients: In a separate bowl, mix together the bread flour, salt, and cinnamon.
  3. Form the dough: Gradually add the dry ingredients into the yeast mixture, stirring until a rough dough forms.
  4. Knead the dough: Transfer the dough onto a floured surface and knead for approximately 10 minutes.
  5. Add the raisins: Gently fold in the raisins.
  6. Let it rise: Place your dough in a greased bowl, cover it with a kitchen towel, and let it rise until it doubles in size, about 1 hour.
  7. Preheat the oven: As the dough rises, preheat your oven to 425°F (220°C).
  8. Prepare to boil: In a large pot, bring water to a boil and stir in the malt syrup if using.
  9. Shape the bagels: Punch down the dough, divide it into 8 equal pieces, and shape into bagels.
  10. Boil the bagels: Carefully place each bagel into the boiling water, letting them boil for 1-2 minutes on each side.
  11. Prepare for baking: Transfer the boiled bagels onto a baking sheet lined with parchment paper.
  12. Bake to perfection: Bake for 20-25 minutes until golden brown.
  13. Cool and serve: Allow the bagels to cool on a wire rack before enjoying.

Notes

You can prepare the dough a day in advance and let it rise in the fridge overnight. Feel free to experiment with different flavors by adding nuts or different dried fruits.
