Ingredients

  • 4 cups corn (fresh, frozen, or canned)
  • 1 cup cooked bacon, crumbled
  • 1 cup shredded cheese (cheddar or your choice)
  • 1/2 cup green onions, chopped
  • 1/2 cup jalapeños, diced (adjust to taste)
  • 1 cup sour cream
  • 1/2 cup ranch dressing
  • Salt and pepper to taste

Instructions

  1. In a large mixing bowl, combine the corn, crumbled bacon, shredded cheese, green onions, and diced jalapeños. Toss gently to mix everything well.
  2. In a separate bowl, whisk together the sour cream and ranch dressing until smooth.
  3. Pour the dressing over the corn mixture. Stir gently but thoroughly until every bit of corn is enveloped in that rich dressing.
  4. Season with salt and pepper to your liking, tasting as you go to achieve that perfect balance of flavors.
  5. Chill in the refrigerator for at least 30 minutes before serving.
