Ingredients
- Beef Tips: 2 pounds of beef chuck, cut into 1-inch cubes
- Marinade: 1/4 cup soy sauce, 2 tablespoons Worcestershire sauce, 1 tablespoon olive oil, 2 cloves garlic (minced), 1 teaspoon black pepper
- Vegetables: 1 large onion (chopped), 2 carrots (sliced), 2 stalks celery (chopped)
- Potatoes: 2 pounds Yukon Gold potatoes (peeled and cubed)
- Creamy Sauce: 1 cup heavy cream, 1/2 cup sour cream, 1/4 cup grated Parmesan cheese, salt and pepper to taste
Instructions
- In a large bowl, combine soy sauce, Worcestershire sauce, olive oil, garlic, and black pepper. Add beef cubes and marinate for at least 1 hour, preferably overnight.
- Preheat the oven to 350°F (175°C).
- In a large skillet over medium-high heat, sear the marinated beef tips until browned on all sides, about 5-7 minutes.
- Add chopped onion, carrots, and celery to the skillet, cooking until softened, about 5 minutes.
- Transfer the beef and vegetables to a baking dish, cover with foil, and bake for 1.5 hours until the beef is tender.
- Meanwhile, boil the cubed potatoes in salted water until fork-tender, about 15-20 minutes. Drain and return to the pot.
- Stir in heavy cream, sour cream, Parmesan cheese, salt, and pepper into the potatoes, mashing until creamy.
- Once the beef is done, serve it over the creamy potatoes, garnishing with fresh parsley if desired.
