Indulge in the rich, savory flavors of Country-Style Beef Tips, perfectly complemented by creamy, buttery potatoes. Each bite offers a delightful contrast of tender beef and velvety potatoes, creating a comforting dish that warms the soul.

Ingredients

  • Beef Tips: 2 pounds of beef chuck, cut into 1-inch cubes
  • Marinade: 1/4 cup soy sauce, 2 tablespoons Worcestershire sauce, 1 tablespoon olive oil, 2 cloves garlic (minced), 1 teaspoon black pepper
  • Vegetables: 1 large onion (chopped), 2 carrots (sliced), 2 stalks celery (chopped)
  • Potatoes: 2 pounds Yukon Gold potatoes (peeled and cubed)
  • Creamy Sauce: 1 cup heavy cream, 1/2 cup sour cream, 1/4 cup grated Parmesan cheese, salt and pepper to taste

Instructions

  1. In a large bowl, combine soy sauce, Worcestershire sauce, olive oil, garlic, and black pepper. Add beef cubes and marinate for at least 1 hour, preferably overnight.
  2. Preheat the oven to 350°F (175°C).
  3. In a large skillet over medium-high heat, sear the marinated beef tips until browned on all sides, about 5-7 minutes.
  4. Add chopped onion, carrots, and celery to the skillet, cooking until softened, about 5 minutes.
  5. Transfer the beef and vegetables to a baking dish, cover with foil, and bake for 1.5 hours until the beef is tender.
  6. Meanwhile, boil the cubed potatoes in salted water until fork-tender, about 15-20 minutes. Drain and return to the pot.
  7. Stir in heavy cream, sour cream, Parmesan cheese, salt, and pepper into the potatoes, mashing until creamy.
  8. Once the beef is done, serve it over the creamy potatoes, garnishing with fresh parsley if desired.
