- 4 cups Soft Bread (brioche or challah)
- 8 oz Cream Cheese, softened
- 2 cups Fresh Strawberries, chopped
- 4 large Eggs
- 1 cup Milk (whole or non-dairy)
- 1/2 cup Sugar
- 1 tsp Cinnamon
- 2 tsp Vanilla extract
- 4 tbsp Butter, melted
Instructions
- Preheat the oven to 350°F (175°C) and grease a muffin tin generously with non-stick spray or melted butter.
- In a mixing bowl, whisk together the eggs, milk, sugar, cinnamon, and vanilla extract until well combined and frothy.
- Cut the soft bread into small cubes and gently fold them into the egg mixture.
- In another bowl, mix softened cream cheese with chopped strawberries until blended.
- Fill each muffin cup about halfway with the bread mixture, add a spoonful of the cream cheese-strawberry mixture, then top with more bread mixture.
- Bake for 20-25 minutes until golden brown and puffed.
- Let cool for a few minutes before gently removing from the tin.
Notes
Can be prepared the night before and refrigerated overnight for make-ahead ease. Serve with maple syrup or whipped cream.
