Cream Cheese Strawberry French Toast Muffins

Description

Delicious muffins combining warm bread, sweet strawberries, and creamy cheese for a delightful breakfast treat.


Ingredients

  • 4 cups Soft Bread (brioche or challah)
  • 8 oz Cream Cheese, softened
  • 2 cups Fresh Strawberries, chopped
  • 4 large Eggs
  • 1 cup Milk (whole or non-dairy)
  • 1/2 cup Sugar
  • 1 tsp Cinnamon
  • 2 tsp Vanilla extract
  • 4 tbsp Butter, melted

Instructions

  1. Preheat the oven to 350°F (175°C) and grease a muffin tin generously with non-stick spray or melted butter.
  2. In a mixing bowl, whisk together the eggs, milk, sugar, cinnamon, and vanilla extract until well combined and frothy.
  3. Cut the soft bread into small cubes and gently fold them into the egg mixture.
  4. In another bowl, mix softened cream cheese with chopped strawberries until blended.
  5. Fill each muffin cup about halfway with the bread mixture, add a spoonful of the cream cheese-strawberry mixture, then top with more bread mixture.
  6. Bake for 20-25 minutes until golden brown and puffed.
  7. Let cool for a few minutes before gently removing from the tin.

Notes

Can be prepared the night before and refrigerated overnight for make-ahead ease. Serve with maple syrup or whipped cream.
