Instructions
- Combine the chopped corned beef, sauerkraut, Swiss cheese, and season with salt and pepper in a large mixing bowl.
- Roll the mixture into bite-sized balls, ensuring they hold together well.
- Set up a breading station with three bowls: one with flour, one with beaten eggs, and one with breadcrumbs.
- Roll each ball in the flour, dip in the egg, then coat with breadcrumbs.
- Heat oil in a deep fryer or large skillet over medium heat until glistening.
- Fry the balls in batches for about 3-4 minutes or until golden brown and crispy.
- Remove with a slotted spoon and let them drain on paper towels. Serve warm.
Notes
These can be made ahead of time and frozen. Fry directly from freezer, adding an extra minute to cooking time.
