Description

A vibrant salad featuring roasted cauliflower and chickpeas, dressed with a creamy Greek yogurt and curry powder dressing, perfect for any occasion.


Ingredients

  • 1 head Cauliflower, cut into florets
  • 1 can Chickpeas, drained and rinsed
  • 1/2 cup Raisins
  • 1/4 cup Pistachios, chopped
  • 1/4 cup Fresh Cilantro, chopped
  • 1/2 cup Greek Yogurt
  • 2 tbsp Curry Powder
  • 2 tbsp Olive Oil
  • Salt, to taste
  • Pepper, to taste

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Toss the cauliflower florets in a bowl with olive oil, curry powder, salt, and pepper until well coated.
  3. Spread the seasoned cauliflower onto a baking sheet in an even layer. Roast in the oven for about 25 minutes or until golden and tender, stirring halfway through.
  4. Combine the roasted cauliflower, chickpeas, raisins, and chopped pistachios in a large mixing bowl.
  5. Mix the Greek yogurt with freshly chopped cilantro and any additional seasoning to your taste.
  6. Drizzle the yogurt dressing over the salad and gently toss to combine.
  7. Garnish with extra cilantro if desired, and serve chilled or at room temperature.

Notes

For make-ahead, prepare the roasted cauliflower and store in an airtight container for up to three days. Serve warm or chilled.
