- 1 head Cauliflower, cut into florets
- 1 can Chickpeas, drained and rinsed
- 1/2 cup Raisins
- 1/4 cup Pistachios, chopped
- 1/4 cup Fresh Cilantro, chopped
- 1/2 cup Greek Yogurt
- 2 tbsp Curry Powder
- 2 tbsp Olive Oil
- Salt, to taste
- Pepper, to taste
Instructions
- Preheat your oven to 400°F (200°C).
- Toss the cauliflower florets in a bowl with olive oil, curry powder, salt, and pepper until well coated.
- Spread the seasoned cauliflower onto a baking sheet in an even layer. Roast in the oven for about 25 minutes or until golden and tender, stirring halfway through.
- Combine the roasted cauliflower, chickpeas, raisins, and chopped pistachios in a large mixing bowl.
- Mix the Greek yogurt with freshly chopped cilantro and any additional seasoning to your taste.
- Drizzle the yogurt dressing over the salad and gently toss to combine.
- Garnish with extra cilantro if desired, and serve chilled or at room temperature.
Notes
For make-ahead, prepare the roasted cauliflower and store in an airtight container for up to three days. Serve warm or chilled.
