  • 2 3/4 cups milk
  • 3 egg yolks
  • 2 tablespoons butter
  • 1 teaspoon vanilla extract
  • Whipped cream for topping

Instructions

  1. Preheat your oven according to the instructions for your pie crust. Bake it until golden brown, then let it cool completely.
  2. Mix the brown sugar, cornstarch, and salt in a medium saucepan.
  3. Incorporate the milk gradually, whisking to ensure there are no lumps, then place over medium heat.
  4. Cook the filling, stirring constantly with a spatula until thickened and it boils.
  5. Temper the egg yolks by whisking them in a separate bowl and adding a scoop of the hot filling to prevent curdling. Return this mixture to the saucepan.
  6. Finish the filling by stirring in the butter and vanilla, cooking for another minute while stirring until thick and glossy.
  7. Fill the cooled pie crust with the warm butterscotch filling, smoothing with a spatula.
  8. Chill to room temperature, then refrigerate for at least 2 hours. Top with whipped cream before serving.
