Instructions
- Preheat your oven according to the instructions for your pie crust. Bake it until golden brown, then let it cool completely.
- Mix the brown sugar, cornstarch, and salt in a medium saucepan.
- Incorporate the milk gradually, whisking to ensure there are no lumps, then place over medium heat.
- Cook the filling, stirring constantly with a spatula until thickened and it boils.
- Temper the egg yolks by whisking them in a separate bowl and adding a scoop of the hot filling to prevent curdling. Return this mixture to the saucepan.
- Finish the filling by stirring in the butter and vanilla, cooking for another minute while stirring until thick and glossy.
- Fill the cooled pie crust with the warm butterscotch filling, smoothing with a spatula.
- Chill to room temperature, then refrigerate for at least 2 hours. Top with whipped cream before serving.
