- 1 onion, chopped

Instructions
- Boil the potatoes: Fill a large pot with salted water and bring to a boil. Add the potatoes and simmer for about 15-20 minutes, or until tender. Drain and allow to cool before peeling and cubing.
- Cook the bacon: In a skillet over medium heat, cook the bacon until crispy. Remove from the pan and chop into bite-sized pieces, reserving the drippings.
- Caramelize the onions: In the same skillet, add chopped onion to the bacon drippings. Sauté until golden brown and tender.
- Whisk together the dressing: In a mixing bowl, combine apple cider vinegar, sugar, and vegetable oil. Whisk until blended, then add caramelized onions and cooked bacon.
- Combine everything: Mix cubed potatoes with the dressing in a large bowl. Season with salt and pepper to taste. Toss carefully to avoid breaking the potatoes, and serve warm, garnished with chives if desired.
