- 1 cup granulated sugar
- 2 large eggs
- 1/2 cup fresh lemon juice
- Zest of 2 lemons
- 1 1/2 cups all-purpose flour
- 1/4 teaspoon salt
- Powdered sugar for dusting
- 1 cup strawberries (for glaze)
- 1/2 cup powdered sugar (for glaze)
Instructions
- Preheat your oven to 350°F (175°C) and grease a 9×9-inch baking dish.
- In a medium saucepan, melt the butter over medium heat until golden brown.
- Remove from heat and let cool slightly.
- In a mixing bowl, whisk together the granulated sugar and eggs until creamy.
- Stir in the fresh lemon juice and zest.
- Pour in the golden brown butter and fold gently until combined.
- Sift the flour and salt over the mixture, mixing until just combined.
- Spread the batter into the prepared baking dish.
- Bake for 20-25 minutes or until edges are golden and a toothpick comes out clean.
- While the bars bake, blend strawberries for the glaze and mix with powdered sugar.
- Once bars cool, drizzle with strawberry glaze and dust with powdered sugar.
- Cut into squares and serve chilled or at room temperature.
Notes
These bars can be made a day in advance. They keep well in the fridge for up to a week or can be frozen for longer storage.
