Ingredients

  • 2 ears of corn, husked and grilled
  • 1/4 cup fresh lime juice
  • 2 tablespoons agave nectar
  • 1/4 cup chopped fresh cilantro
  • Salt and pepper to taste

Instructions

  1. Preheat the grill to medium heat.
  2. Grill the corn until lightly charred, about 10 minutes, turning occasionally.
  3. Remove the corn from the grill and let it cool slightly. Slice the kernels off the cob.
  4. Combine the grilled corn, sliced zucchini, lime juice, agave nectar, and chopped cilantro in a large bowl.
