Ingredients

- 1 cup quinoa
- 2 cups water
- 1 teaspoon salt
- 1 tablespoon olive oil
- 1 large zucchini, sliced
- 1 red bell pepper, chopped
- 1 yellow bell pepper, chopped
- 1 small red onion, sliced
- 1 cup cherry tomatoes, halved
- 1 can (15 oz) chickpeas, drained and rinsed
- 1 teaspoon dried oregano
- 1 teaspoon smoked paprika
- 1/4 teaspoon ground black pepper
- 1/4 cup chopped fresh parsley
- Juice of 1 lemon
- 1/2 cup crumbled feta cheese (optional)
Instructions
- Rinse the quinoa under cold water until it runs clear.
- In a medium saucepan, combine the rinsed quinoa, 2 cups of water, and 1/2 teaspoon of salt. Bring to a boil, cover, and reduce heat to simmer for 15-20 minutes until water is absorbed. Fluff with a fork and set aside.
- Preheat your grill or grill pan over medium-high heat.
- Toss zucchini, bell peppers, onion, and tomatoes with olive oil, the remaining 1/2 teaspoon salt, oregano, smoked paprika, and black pepper in a large bowl.
- Grill the vegetable mixture for 5-7 minutes on each side until tender and marked. Remove from grill.
- In the bowl with the vegetables, mix in chickpeas and cooked quinoa. Stir in parsley and lemon juice. Top with feta if desired.
Notes
For a vegan option, omit the feta cheese. Make ahead by preparing quinoa and grilling vegetables separately for quick assembly later.
