Instructions
- Prepare the tonkatsu sauce by mixing ketchup, Worcestershire sauce, soy sauce, sugar, and Dijon mustard in a bowl. Set aside.
- Season the beef slices with salt and pepper.
- Set up a breading station: place flour in one bowl, beaten eggs in another, and panko breadcrumbs in a third.
- Dredge each beef slice in flour, dip in egg, and coat with panko breadcrumbs, pressing gently to adhere.
- Heat vegetable oil in a large skillet over medium-high heat until shimmering (about 350°F).
- Fry the breaded beef slices in batches for 3-4 minutes on each side, or until golden brown and cooked through.
- Remove from the skillet and drain on paper towels.
- Slice the katsu into strips and serve over a bed of cooked rice, topped with shredded cabbage and drizzled with tonkatsu sauce.
