Description

A vibrant and refreshing salad bursting with fresh vegetables, creamy mozzarella, and a tangy red wine vinaigrette.


Ingredients

  • 1 head Romaine lettuce, chopped
  • 1 cup Cherry tomatoes, halved
  • 1/2 cup Olives (Kalamata or green), pitted and sliced
  • 1 cup Fresh mozzarella, cubed
  • 1/4 Red onion, thinly sliced
  • 1 Bell pepper, chopped
  • 1 can (15 oz) Garbanzo beans, drained and rinsed
  • 1/4 cup Fresh basil leaves, torn
  • 1/4 cup Red wine vinaigrette
  • 2 tablespoons Parmesan cheese, shaved
  • 1 tablespoon Lemon juice, freshly squeezed

Instructions

  1. Chop the romaine lettuce, cherry tomatoes, olives, red onion, and bell peppers into bite-sized pieces.
  2. Combine the chopped vegetables with the garbanzo beans and fresh basil in a large mixing bowl.
  3. Drizzle with red wine vinaigrette and toss gently until everything is well coated.
  4. Finish with a sprinkle of shaved Parmesan and a squeeze of fresh lemon juice.
  5. Serve immediately, either as a standalone light meal or a refreshing side.
