- 1 head Romaine lettuce, chopped
- 1 cup Cherry tomatoes, halved
- 1/2 cup Olives (Kalamata or green), pitted and sliced
- 1 cup Fresh mozzarella, cubed
- 1/4 Red onion, thinly sliced
- 1 Bell pepper, chopped
- 1 can (15 oz) Garbanzo beans, drained and rinsed
- 1/4 cup Fresh basil leaves, torn
- 1/4 cup Red wine vinaigrette
- 2 tablespoons Parmesan cheese, shaved
- 1 tablespoon Lemon juice, freshly squeezed
Instructions
- Chop the romaine lettuce, cherry tomatoes, olives, red onion, and bell peppers into bite-sized pieces.
- Combine the chopped vegetables with the garbanzo beans and fresh basil in a large mixing bowl.
- Drizzle with red wine vinaigrette and toss gently until everything is well coated.
- Finish with a sprinkle of shaved Parmesan and a squeeze of fresh lemon juice.
- Serve immediately, either as a standalone light meal or a refreshing side.
