- 1 lb shrimp, peeled and deveined
- 2 tbsp olive oil
- 3 cloves garlic, minced
- 1 cup heavy cream
- 1/2 cup grated Parmesan cheese
- 1/2 cup sun-dried tomatoes, chopped
- 1 cup fresh spinach
- 1/4 cup fresh basil, chopped
- Salt and pepper to taste
Instructions
- Cook the pasta in a large pot according to package instructions until al dente.
- Heat olive oil in a large skillet over medium heat.
- Sauté the minced garlic for about 1 minute until fragrant.
- Add the shrimp and cook until pink and opaque, about 3-4 minutes.
- Pour in the heavy cream, bringing it to a gentle simmer.
- Incorporate sun-dried tomatoes, Parmesan, and spinach, cooking until spinach wilts and the sauce thickens, about 3-5 minutes.
- Toss with the cooked pasta and basil using tongs.
- Season to taste with salt and pepper.
- Serve warm, garnished with additional basil or Parmesan if desired.
