Description

Ingredients

  • 8 oz pasta (fettuccine or linguine)
  • 1 lb shrimp, peeled and deveined
  • 2 tbsp olive oil
  • 3 cloves garlic, minced
  • 1 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • 1/2 cup sun-dried tomatoes, chopped
  • 1 cup fresh spinach
  • 1/4 cup fresh basil, chopped
  • Salt and pepper to taste

Instructions

  1. Cook the pasta in a large pot according to package instructions until al dente.
  2. Heat olive oil in a large skillet over medium heat.
  3. Sauté the minced garlic for about 1 minute until fragrant.
  4. Add the shrimp and cook until pink and opaque, about 3-4 minutes.
  5. Pour in the heavy cream, bringing it to a gentle simmer.
  6. Incorporate sun-dried tomatoes, Parmesan, and spinach, cooking until spinach wilts and the sauce thickens, about 3-5 minutes.
  7. Toss with the cooked pasta and basil using tongs.
  8. Season to taste with salt and pepper.
  9. Serve warm, garnished with additional basil or Parmesan if desired.
