- 1 bag of tater tots
- 1 lb ground beef or turkey
- 1 can black beans, drained and rinsed
- 1 cup corn kernels
- 1 packet taco seasoning
- 1 cup salsa
- 2 cups shredded cheese (cheddar or Mexican blend)
- 1/2 cup sour cream
- Chopped green onions for garnish
Instructions
- Preheat your oven to 400°F (200°C).
- Brown your ground beef or turkey in a large skillet over medium heat for 5-7 minutes.
- Drain any excess fat from the skillet.
- Stir in the taco seasoning, black beans, corn, and salsa, cooking for another 2-3 minutes.
- Grease your 9×13 inch baking dish.
- Spread the meat mixture evenly across the bottom of the dish.
- Top with a layer of tater tots, arranging them neatly.
- Sprinkle shredded cheese over the tater tots.
- Bake for 25-30 minutes until golden and crispy.
- Let cool for a moment, then serve with sour cream and green onions.
Notes
For an extra crispy top, broil for 2-3 minutes at the end. Prepare your meat mixture a day in advance for a stress-free meal.
