Description

A comforting Mexican-inspired casserole featuring crispy tater tots, seasoned ground meat, black beans, corn, and melted cheese.


Ingredients

  • 1 bag of tater tots
  • 1 lb ground beef or turkey
  • 1 can black beans, drained and rinsed
  • 1 cup corn kernels
  • 1 packet taco seasoning
  • 1 cup salsa
  • 2 cups shredded cheese (cheddar or Mexican blend)
  • 1/2 cup sour cream
  • Chopped green onions for garnish

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Brown your ground beef or turkey in a large skillet over medium heat for 5-7 minutes.
  3. Drain any excess fat from the skillet.
  4. Stir in the taco seasoning, black beans, corn, and salsa, cooking for another 2-3 minutes.
  5. Grease your 9×13 inch baking dish.
  6. Spread the meat mixture evenly across the bottom of the dish.
  7. Top with a layer of tater tots, arranging them neatly.
  8. Sprinkle shredded cheese over the tater tots.
  9. Bake for 25-30 minutes until golden and crispy.
  10. Let cool for a moment, then serve with sour cream and green onions.

Notes

For an extra crispy top, broil for 2-3 minutes at the end. Prepare your meat mixture a day in advance for a stress-free meal.
