  • 1 cup sugar
  • 1/2 cup butter, softened
  • 1/2 cup milk
  • 2 eggs
  • 1 teaspoon baking powder
  • 1/2 teaspoon vanilla extract
  • 1 can pineapple rings
  • Brown sugar for caramelizing

Instructions

  1. Preheat the oven to 350°F (175°C). Grease a muffin tin generously to prevent sticking.
  2. Cream together the butter and sugar in a mixing bowl until the mixture turns light and fluffy.
  3. Add the eggs one at a time, mixing well after each addition.
  4. In a separate bowl, combine the flour, baking powder, and milk. Gradually stir this mixture into the butter blend until just combined.
  5. In the bottom of each muffin cup, place a ring of pineapple, followed by a sprinkle of brown sugar.
  6. Pour the batter over the pineapple rings until each cup is about two-thirds full.
  7. Bake for 20-25 minutes or until a toothpick inserted into the center comes out clean.
  8. Let cool for a few minutes before inverting onto a plate.
