- 1 cup all-purpose flour
- 1 cup sugar
- 1/2 cup butter, softened
- 1/2 cup milk
- 2 eggs
- 1 teaspoon baking powder
- 1/2 teaspoon vanilla extract
- 1 can pineapple rings
- Brown sugar for caramelizing
Instructions
- Preheat the oven to 350°F (175°C). Grease a muffin tin generously to prevent sticking.
- Cream together the butter and sugar in a mixing bowl until the mixture turns light and fluffy.
- Add the eggs one at a time, mixing well after each addition.
- In a separate bowl, combine the flour, baking powder, and milk. Gradually stir this mixture into the butter blend until just combined.
- In the bottom of each muffin cup, place a ring of pineapple, followed by a sprinkle of brown sugar.
- Pour the batter over the pineapple rings until each cup is about two-thirds full.
- Bake for 20-25 minutes or until a toothpick inserted into the center comes out clean.
- Let cool for a few minutes before inverting onto a plate.
