Description

Ingredients

  • 4 large eggs
  • 1 cup buttermilk
  • 1 tablespoon vanilla extract

  • ½ teaspoon salt
  • 1 cup powdered sugar (for glaze)
  • 2 tablespoons brown butter (for glaze)
  • 1 teaspoon vanilla bean paste (for glaze)
  • 23 tablespoons milk (for glaze)

Instructions

  1. Preheat your oven to 350°F (175°C) and grease two 9-inch round cake pans.
  2. Cream the butter and sugar together in a large mixing bowl until light and fluffy, about 3-5 minutes.
  3. Add the eggs one at a time, mixing well after each addition.
  4. Stir in the buttermilk and vanilla extract until smooth.
  5. Whisk together the flour, baking powder, baking soda, and salt in another bowl.
  6. Gradually add the dry ingredients to the wet ingredients, mixing gently until just combined.
  7. Divide the batter evenly between the prepared pans and smooth the tops.
  8. Bake for 25-30 minutes or until a toothpick inserted in the center comes out clean.
  9. Allow the cakes to cool in the pans for 10 minutes, then transfer to a wire rack to cool completely.
  10. Whisk together the powdered sugar, brown butter, vanilla bean paste, and milk to make the glaze.
  11. Drizzle the glaze generously over the cooled cakes.

Notes

For a vegan alternative, replace eggs with chia seeds mixed with water. Make the cake layers a day ahead and wrap them for storage.
