Delicious oatmeal raisin bars with a chewy texture and a hint of cinnamon that are perfect for any occasion.
Ingredients

- 2 cups rolled oats
- 1 cup all-purpose flour
- 1/2 cup brown sugar
- 1/4 cup granulated sugar
- 1/2 teaspoon baking soda
- 1/2 teaspoon ground cinnamon
- 1/4 teaspoon salt
- 1/2 cup unsalted butter, softened
- 1 large egg
- 1 teaspoon vanilla extract
- 1 cup raisins
Instructions
- Preheat your oven to 350°F (175°C) and grease a baking pan.
- Mix the dry ingredients in a large bowl until well combined.
- Cream the wet ingredients in another bowl, starting with butter and sugars, then adding the egg and vanilla.
- Combine the wet and dry mixtures until just combined.
- Fold in the raisins evenly throughout the batter.
- Spread the mixture into the prepared baking pan.
- Bake for 25-30 minutes until golden brown.
- Cool in the pan for 10 minutes, then transfer to a cooling rack and cut into squares.
Notes
You can add chocolate chips or nuts for variation. These bars are also great freshly baked or stored for later.
