Description

Delicious oatmeal raisin bars with a chewy texture and a hint of cinnamon that are perfect for any occasion.


Ingredients

  • 2 cups rolled oats
  • 1 cup all-purpose flour
  • 1/2 cup brown sugar
  • 1/4 cup granulated sugar
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon salt
  • 1/2 cup unsalted butter, softened
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 cup raisins

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a baking pan.
  2. Mix the dry ingredients in a large bowl until well combined.
  3. Cream the wet ingredients in another bowl, starting with butter and sugars, then adding the egg and vanilla.
  4. Combine the wet and dry mixtures until just combined.
  5. Fold in the raisins evenly throughout the batter.
  6. Spread the mixture into the prepared baking pan.
  7. Bake for 25-30 minutes until golden brown.
  8. Cool in the pan for 10 minutes, then transfer to a cooling rack and cut into squares.

Notes

You can add chocolate chips or nuts for variation. These bars are also great freshly baked or stored for later.
