Ingredients

  • 1 1/2 cups graham cracker crumbs
  • 1/2 cup unsalted butter, melted
  • 1 cup sugar
  • 1 package (8 oz) cream cheese, softened
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup pecans, chopped
  • 1 cup corn syrup
  • 1/4 cup brown sugar
  • 1/4 teaspoon salt

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Combine graham cracker crumbs and melted butter until blended. Press into the bottom of a 9-inch springform pan.
  3. Beat cream cheese with sugar until smooth and fluffy. Add eggs and vanilla, mixing until fully combined.
  4. Pour cream cheese mixture over the crust.
  5. Whisk together corn syrup, brown sugar, salt, and pecans in another bowl.
  6. Pour pecan mixture over the cheesecake layer.
  7. Bake for about 55-60 minutes, until center is slightly jiggly.
  8. Cool to room temperature, then chill in the fridge for at least 4 hours or overnight.
