Ingredients

  • 4 large bell peppers
  • 1 cup pimento cheese
  • 1/2 cup diced green onions
  • 1/4 cup diced jalapeños (optional)
  • 1/2 cup shredded cheddar cheese
  • 1 tablespoon olive oil
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Cut the tops off the bell peppers and remove the seeds.
  3. In a bowl, mix the pimento cheese, green onions, jalapeños, and half of the shredded cheddar cheese.
  4. Stuff the mixture into the bell peppers.
  5. Place the stuffed peppers in a baking dish and drizzle with olive oil. Season with salt and pepper.
  6. Top with the remaining cheddar cheese.
  7. Bake for 25-30 minutes, or until the peppers are tender and the cheese is bubbly.
  8. Let cool slightly before serving.
