- 4 large bell peppers
- 1 cup pimento cheese
- 1/2 cup diced green onions
- 1/4 cup diced jalapeños (optional)
- 1/2 cup shredded cheddar cheese
- 1 tablespoon olive oil
- Salt and pepper to taste
Instructions
- Preheat the oven to 375°F (190°C).
- Cut the tops off the bell peppers and remove the seeds.
- In a bowl, mix the pimento cheese, green onions, jalapeños, and half of the shredded cheddar cheese.
- Stuff the mixture into the bell peppers.
- Place the stuffed peppers in a baking dish and drizzle with olive oil. Season with salt and pepper.
- Top with the remaining cheddar cheese.
- Bake for 25-30 minutes, or until the peppers are tender and the cheese is bubbly.
- Let cool slightly before serving.
Notes
- Feel free to customize the cheese mixture with your favorite ingredients.
- These can be made ahead of time and baked just before serving.
- For a spicier kick, add more jalapeños or use spicy pimento cheese.
