Description
A comforting dish featuring seasoned pork meatballs served over creamy sweet potato mash and topped with a luscious bourbon-maple sauce.
Ingredients
Scale
- 1 lb ground pork
- 1/2 cup breadcrumbs
- 1/4 cup grated Parmesan cheese
- 1 egg
- 2 cloves garlic, minced
- 1 tsp salt
- 1/2 tsp black pepper
- 2 large sweet potatoes, peeled and chopped
- 1/4 cup butter
- 1/4 cup milk
- 1/4 cup bourbon
- 1/4 cup maple syrup
- 1 tbsp soy sauce
Instructions
- Preheat your oven to 400°F (200°C).
- In a large mixing bowl, combine the ground pork, breadcrumbs, grated Parmesan, egg, minced garlic, salt, and black pepper. Mix well until all ingredients blend harmoniously.
- Using your hands, shape the mixture into meatballs, approximately the size of a golf ball, and lay them on a baking sheet lined with parchment paper.
- Bake the meatballs for 20-25 minutes, or until they’re cooked through and have achieved a gorgeous golden color.
- While the meatballs bake, bring a pot of salted water to a boil. Add the chopped sweet potatoes and cook until they’re tender, about 15-20 minutes.
- Drain the sweet potatoes and return them to their pot. Mash them well, adding the butter and milk for a creamy consistency.
- In a small saucepan, combine the bourbon, maple syrup, and soy sauce. Bring to a simmer and let it cook for about 5 minutes.
- Serve the meatballs atop the sweet potato mash and generously drizzle with bourbon-maple sauce.
Notes
Make-ahead tips: You can prepare the meatballs ahead of time and refrigerate them for up to 24 hours before baking. Cooking alternatives: If you prefer an air fryer, arrange the meatballs in a single layer and cook at 375°F (190°C) for about 15-18 minutes.
